This is how Austria tastes

Recipe: Original Kaiserschmarren

A fluffy Kaiserschmarren is simply part of holidays in Austria and should not be missing from any menu. Sprinkled with icing sugar and served with a apple sauce or stewed plums .... hmmmm! We show you how you can easily recreate this Austrian dish at home.

 

You need (for 2 servings):

  • 2 eggs
  • 120 g flour
  • 190 ml milk (alternatively oat milk)
  • Sultanas if you like
  • salt, sugar, cinnamon
  • some butter 

 

Let's go! Carefully break the eggs and separate the yolks from the whites. Use a mixer to beat the egg whites with a pinch of salt until it forms a firm peak. In a second mixing bowl, mix the yolks with two to six tablespoons of sugar (depending on the desired sweetness) and a pinch of cinnamon. Add the milk and stir well. Now carefully stir the flour into the yolk mixture. Finally, add the egg whites from the other bowl into the dough mix.

Now heat about two tablespoons of butter in a coated pan and then add the mixture. Turn the heat down to medium and wait patiently until the Kaiserschmarren can be loosened with a spatula. Now you can turn the pancake and divide it into many small pieces with a fork or a spatula. If you like, you can give the dessert even more flavour with a dash of cherry rum.

Sprinkle the Kaiserschmarren with granulated sugar during the last few minutes in the pan and allow to caramelise. Then serve the Kaiserschmarrn sprinkled with icing sugar and apple sauce or stewed plums. Enjoy your meal!
